I love pickling vegetables, especially the red onion from Tropea, in Italy. It is a particular onion that grows only in Calabria, around the town of Tropea, from which it takes its name. It has a stronger flavour and is much sweeter in taste and aroma than other red onions. It is not as red as the others, but it is perfect to make jams with.
