Satay is a dish of grilled skewered meat that is eaten with a fragrant peanut sauce. Another hawker hero, satay is available at most hawker centres all over sunny Singapore and there are now companies that specialise in supplying frozen satay.

Method

  1. Start preparations a day ahead.
  2. Cut meat into strips about 2.5-cm (1-in) wide.
  3. Remove tough outer leaves from lemongrass and trim ends. Cut into short lengths and place in a food processor with rest of ingredients for marinade. Blend into a smooth paste.
  4. Add marinade paste to meat and mix well. Cover and let sit in the fridge overnight.
