Tau suan is a dessert soup made with split mung beans. These lentils are said to help reduce body heatiness, and we believe that the starchy and gooey concoction will help warm the stomach as well!

Ingredients

  • 500 g (1 lb oz) mung beans

Method

  1. Rinse and soak mung beans in water for 2 hours.
  2. Cut 5 pandan leaves into short strips and place some on a steaming tray. Drain mung beans and transfer to steaming tray. Place remaining cut pandan leaves on mung beans and steam for 10 minutes.
  3. Mix sweet potato starch with water. Set aside.
