An excellent dish filled with nutrients that can be eaten hot or cold. The frittata is an Italian egg dish similar to the Spanish tortilla. In this case it is filled with spaghetti and courgettes and flavoured with cheese. The pasta becomes soft so the frittata is served sliced making it easy to eat.
This is a tasty Italian dish from the Campania region that’s easily adapted for different vegetables. It also uses leftover pasta, which cuts down on food waste.
