  • lbs. baby new potatoes (washed)
  • 2-3 Tbsp. butter
  • 2 T

Method

Prepare all of the ingredients as directed. Place the potatoes in a medium pan and cover with cold water. Heat to boiling, then turn the heat down to medium and cook the potatoes for 15 minutes. Potatoes are ready when easily pierced with a fork. Drain potatoes and place in a medium serving bowl. Add the butter, parsley, salt and pepper, and toss to combine. Serve warm with the meatballs.
