Ingredients

  • 2 Tbsp. oil
  • 1 large eggplant (large dice)
  • 1 large onion (small dice)

Method

Prepare the vegetables as specified in the ingredients list. In a medium pan, sauté the onion, eggplant, and sweet potatoes for 3 minutes. Add the remaining ingredients and simmer until all the vegetables are tender and the sauce has thickened (30 minutes). Serve with Ugali.
