La Rioja is a highly productive wine-growing region in the north of Spain, but at this point, that’s clear to the world. What may not be as clear is what happens to all that wine that is not shipped around the world or consumed domestically. In La Rioja, inventive chefs use what remains to create distinctly Riojana cuisine. One brilliant example is braising and elevating blander foods in wine.
