Dressed Tomatoes

In Spain it is rare to see a slice of tomato used on its own or, say, on a sandwich. The fruit is always taken a step further. Grated for Pan con Tomate, enveloped into sofrito for a paella, blended for gazpacho, etc. Tomates aliñados, or dressed tomatoes, offers a way to showcase the essence of the fruit itself, and presenting different tomato varieties adds to the intrigue of the dish.
