Chicken Roulade

Just as with flamenco dance, theories abound for the origin of this dish’s name. Some say it means “little Flemish,” referring to the tall, thin, blond guards from Northern Belgium employed by King Carlos I. Some say it stems from the Arabic term for nomadic peasants. Still others lean on Latin and the word for flame. The least likely theory, but the funniest, is that the Flamenquín roll looks like the slender leg of one of the dancers.
