Here is another dish that shares DNA across eras in Spain. It began with the Roman penchant for resuscitating old bread; continued through the Moors bringing cinnamon to the Peninsula; then the Catholics chimed in that sugary, hefty, fried bread would be a great way to avoid meat during high holy days; and then there’s always the French across the border making the strikingly similar pan perdú.
