Just as suckling pig cooked over an open fire was popularized over centuries in what became Spain, alfresco lamb preparations have a long, deep history. Domesticated pigs made their debut with the Romans, but sheep herding was prehistoric, and lamb and mutton were also much more popular meats than pork during the Moor’s dominance of the peninsula.
