Thanks to the Phoenicians and their fish-hunting prowess, tuna has been on Spanish plates for nearly three thousand years. Some of the oldest tuna fishing methods the world-over began in what is now southern Spain. Today, most of the big catch around Cádiz ends up on sushi counters in Japan. Still, much of the fish that remains in Spain that doesn’t get canned appropriately pays tribute to those very same Japanese ways. Tataki is a staple at bars across the country.
