Smoked Trout

Trout is not the first fish that comes to mind when considering Spanish cooking. But in the Basque Country, particularly in the Pyrenees Mountains, trucha is big business. Indeed, without The Sun Also Rises, one might not have even guessed that there is a river-fishing culture in Spain. Most of these fish now come from trout farms in the region, but the image of hip waders and flies is a romantic one.
