The term marmalade came from the Portuguese mermelo for quince, the original sugar-preserved fruit. The process and the word were adopted in Spain and mainly applied to oranges from Sevilla, and today cover all manner of jellies and jams. Here, raspberries, which have only been commercially grown in Spain since 1989, take center stage. Before then, they were cultivated in the wild or imported from France.
