Bovine have been raised throughout Spain for centuries, mainly for field work and bullfighting. But in northern Spain, Galicia and Basque Country are famous for beef cattle that never met a plow or the bullring. Famous steaks include the Rubia Gallega and the Txuleton, both rib cuts, usually very thick and cooked over a live fire. Here, we take a relatively small cut and treat it in a very Spanish fashion.
