The word pisto is from the same base as pesto and pestle. They all mean to mash or pound. In Spain, this means to take all the spring and summer vegetables and cook them in their own juices until they’re closer to a paste than their original form. French ratatouille comes from the word to stir. Generally, the same vegetables, but less destruction.
