In Spain, the egg is queen and is never alone. She intermingles with potatoes, cured meats, and/or vegetables in various formats. This could be a tortilla, cousin to the frittata; estrellados, a “starry” fried egg with beaming whites; rotos—a “broken” fried egg mixed in with the other players; or revueltos, eggs scrambled with a supporting cast. The queen is also not a morning person.
