Let’s not forget to make something for the teetotalers among us. Make it well in advance, as the flavor will really improve with time.

If you do wish to spike it: A splash of vodka never goes wrong.

Ingredients

  • 1 pineapple
  • a big chunk of fresh ginger, 2 or 3 thumbs long

Method

Peel and core the pineapple and chop it into small chunks. Don’t worry about the eyes, as you’ll strain the juice later on.

Peel the ginger and chop it into small chunks. Puree the pineapple with the ginger in a blender or food processor.

Add the sugar and ¾ cup (200 ml) water, stir, and set aside in the refrigerator for 4 hours.
