Name: Salad of Figs, Watercress, Smoked Meat, Mint & Goat’s Milk Yogurt Dressing

Ingredients: then whisk in 3-4 tbsp hazelnut oil; smoked, cured beef or bresaola; 2 bunches water-cress stems removed; 3 or 4 fresh figs; 1 large bunch fresh mint, just the leaves; 1-2 tbsp honey; 3 tbsp roasted & coarsley chopped hazelnuts; whisk thoroughly: ½ cup (125 ml) goat’s milk yogurt; garden cress (pepper-wort); juice + grated zest of 1 lemon; salt & pepper
