A simple starter, so make a lot at once. You can keep it in the fridge for up to a month, provided it’s covered well with a layer of clarified butter.

Ingredients

  • 3 onions, diced
  • ½ cup plus 6 tbsp butter (200

Method

In a medium saucepan over low heat, saute the onions in 3 tbsp (50 g) of the butter until translucent but not browned. Put the onions and the ham in a food processor and grind coarsely.

Add the spices, process to combine, and taste for salt and pepper. The mixture can be seasoned strongly, as the flavors will be muted once it’s chilled.
