In a saucepan over low heat, heat the sugar with ⅓ cup (100 ml) water and stir until the sugar is dissolved. Bring to a boil, stirring. Let simmer for about 10 minutes, then remove from the heat.
Stir in the red pepper flakes, ginger, salt, and soy sauce, then add the nuts. Stir thoroughly to coat the nuts.
Line a baking sheet or serving tray with parchment paper.
