Method

Place the sauerkraut in a sieve and rinse it under the faucet. Let drain. For the dressing, whisk the vinegar and ginger syrup thoroughly and whisk in the hazelnut oil in a thin stream. Taste and season with salt and pepper.

Toast the nuts in a dry skillet until they color slightly. Chop them coarsely.

Mix everything together and serve with rich meat: pulled pork, for example, o
