Put the beans in a large bowl, add water to cover by several inches and let soak for 12 hours.
Drain the beans in a colander, rinse them well, then put them in a large saucepan and cover generously with water. Boil over medium heat until just about tender, 1 to 1½ hours (they will cook some more later in the sauce). Taste and add some salt halfway through. Drain and set aside.
