Chop the onion and chiles fine in a food processor. Heat the vinegar and sugar in a small saucepan. Add the chile mixture and cook for no longer than 3 minutes. If necessary, add 2 tbsp of water to loosen the mixture. Season with salt.
Spoon the sauce into a small bowl and serve with pulled pork, or spread on a croque monsieur. The relish will keep in a clean jar in the fridge for a few
