Mix the sage, garlic, lemon zest, and spices in a mortar and coarsely grind. Spread a sheet of plastic wrap on the counter and sprinkle it with half of the mixture. Place the veal loin on top and sprinkle it with the remaining spice mixture to cover the veal completely. Set aside in the refrigerator for 1 hour, or ideally overnight.
Let the meat come to room temperature before you bake
