Peel the carrots and halve them lengthwise.
Heat the broth and boil the carrots in it for 15 minutes, until tender. Drain.
Preheat the broiler.
Melt the seeded butter in a wide broiler-proof pan. Saute the shallots until they are translucent, then add the carrots. Sprinkle with the thyme and nutmeg.
Stir in the brown sugar and briefly caramelize under the hot bro
