  • cup (100 g) shredded coconut
  • 3 or 4 bananas, halved and halved again lengthwise (for 4 pieces)

Method

Stir the coconut into the batter at the filling stage. Let the batter rise. Dip the banana pieces in the batter, then fry the batter-coated bananas in the hot oil, as above.
