  • About

  • 14 ounces (400 g) fresh goat cheese, at room temperature
  • 3 tablespoons apricot jam
  • 5 peppadew peppers, minced (look for them in the delicatessen section of your supermarket, or jarred in oil)
  • 3 tablespoons minced pickled onion
  • 2 teaspoons spicy mustard
  • 2 tablespoons dry sherry
  • Sea salt and freshly ground black pepper

For the Melba Toast

  • 1 baguette

Preheat the oven to 350°F (180°C). Crumble the goat cheese into a thin single layer in a 6-inch (16-cm) broiler-safe baking dish. In a bowl, beat the jam, the peppadews, onion, mustard, and sherry together into a smooth sauce. Season with salt and add a generous grinding of pepper. Spread out over the goat cheese.

Slice the baguette on a diagonal as thinly as possible. Spread the slices out on a baking sheet and toast in the center of the oven for several minutes until brown, flipping halfway through. Stay close, because these will burn easily.

Preheat the broiler to high. Broil the goat cheese for about 5 minutes on a rack in the highest position, until the top bubbles and the edges start browning.

Serve piping hot with the toast as a snack with drinks.
