Spicy-Sweet Cinnamon Nuts



  • cups (500 g) mixed nuts, such as walnuts, cashews, macadamias, pepitas, Brazil nuts, and jumbo peanuts
  • 2 to 3 tablespoons apple syrup
  • ½ cup (125 ml) maple syrup or honey
  • 1 teaspoon cinnamon
  • Sea salt
  • 1 teaspoon chile flakes (or to taste)
  • 1 tablespoon fresh thyme


Preheat the oven to 350°F (180°C).

Spread the nuts out on a parchment paper–lined baking sheet and bake them in the oven for about 15 minutes, until golden brown and crunchy, flipping them halfway through. Remove them from the oven, but leave the oven on.

In a bowl, combine the apple syrup and maple syrup and stir in the cinnamon, salt to taste, and chile flakes. Stir in the warm nuts until all of them are coated with the syrup.

Spoon them onto the parchment paper–lined baking sheet again. Spread the nuts so they are well separated. Bake for another couple of minutes, until golden brown. Allow them to cool completely. Sprinkle with fresh thyme and break into chunks.
