For the Poached Pear

  • 5 cooking pears
  • cups (300 ml) red wine

Method

Prepare

Peel the pears and put them in a saucepan with the wine, cinnamon stick, star anise, orange peel, sugar, and a pinch of salt. Add enough water to just submerge them. Bring to a boil, then lower the heat and simmer, partially covered, for 30 to 40 minutes, until tender.

Remove the pears from the cooking liquid and let cool. Cut into thick sli
