At home, we regularly eat Japanese food. This isn’t so much thanks to me but rather to my husband, Oof Verschuren. He devours every book and movie about Japanese cuisine that comes out and he is without exaggeration one of the best Japanese chefs I know (excluding “real” ones). He doesn’t prepare standard sushi, but true homemade Japanese food: dishes whose existence I was completely unaware of and whose names I cannot pronounce. When I asked him for a Japanese oven dish for this book, he c
