The winter pumpkin has a gnarled greenish yellow exterior and hourglass form, much cultivated in Italy, Greece, Catalonia. These pumpkins weigh about 2 kilos (47½ pounds), but can be much larger; they are wonderful orange colour inside and sweet. Fine-grained, not fibrous. With half such a pumpkin you can make a winter soup and with the rest an unusual preserve. See also Vegetable Heritage.
