Laganelle, deriving from the rolled out pasta (lagana), are a rustic form of tagliatelle, cm wide, sometimes 2 cm, made with unrefined grano duro (hard wheat), home grown, very filling. The sheet of pasta is well worked, well rolled and well stretched, then floured and rolled for slicing. The resulting strips are unravelled and left to dry on floured wood or marble. You need:
