Lavarellisulla Graticola

La graticola is a grid-iron but it can also mean a grill. Roman grid-irons (Latin craticola) were found in several hearths in Pompeii; they had probably already been one of the conveniences of the Iron Age.

I mention these delicacies, and this way of cooking them, as so many people visit the Italian lakes and may wish to search them out; a delight of inns round Lago di Gar
