Method

To return to the tavern: arrosto means roast, but it is often employed to indicate a braise. First eat your wild boar, and then hasten into the kitchen, if you dare, to enquire how it has been prepared. This is what I gathered from Giovanna Benedetta, the skilful cook:

Hang the boar for 7 or 8 days. The meat employed is taken from the haunch and saddle with a bare centimetre of c
