Method
Clean the pluck from a month-old lamb: spleen (milza), heart (cuore), liver (fegato), lungs (polmone) and slice them neatly on a board.
Open the gut, rub it well with salt, then wash in tepid acidulated water. Sprinkle with flour and wash again. Rinse several times, then dry the gut. Cut it into 8" lengths (20 cm) and lay the strips on a board. Lay across eac
