Beat up the egg yolks in a bowl with the sugar. Mix the flour with a little of the milk to a paste, in a basin. Infuse the cinnamon stick and grated lemon rind in the rest of the milk, just bringing it to the boil, then letting it cool.
Strain the perfumed milk onto the flour and milk paste, stirring, then add this gradually to the egg yolks and sugar. Transfer to an enamelled pan and h
