Grilled Salad Greens with Balsamic Dressing

This mildly sour dressing goes perfectly with the slight bitterness of the various salad greens. The Little Gem will caramelize before getting too bitter. The radicchio can be somewhat overpowering, so use it in moderation. We tried this out with a number of different compact leaf greens and found it also works especially well on Chinese cabbage—and, of course, onions.
