Bay Leaf–Grilled Quail

A rub is nothing more than a spice mix used for flavoring meat, fish, or poultry. We encourage you to experiment with various spices and herbs until you have developed some favorite rubs of your own. We developed this preparation for smaller kamados without a heat shield—first with partridge, and later with quail—because they are basically the only birds you can grill in a small kamado.
