When you are making focaccia, there is an infinite amount of possible flavors. Sprinkle it with some sea salt and finely chopped rosemary. Or fill the dough, before folding it over, with finely sliced sun-dried tomatoes, grated cheese, olives, or herbs. A sweet filling is also delicious—think figs, apricots, or raisins.
