Our friend Peter Bootsma, who gave us this recipe, calls it a “slacker’s dish,” meaning that he makes this whenever he doesn’t have anything else to do. This is the type of dish that you prepare mostly a day—or several days—in advance. You only need to perform a few tasks near the kamado over the span of an entire day. The rest is merely a matter of being daring.
