You can use yellow or red beets for this cooling side dish.

Ingredients

  • 2 medium beets, tops removed
  • 3 cups (750 grams) plain yogurt

Method

  1. Wash the beets thoroughly under running water to remove any mud.
  2. Place a nonstick saucepan over high heat and add 4 cups (800 ml) water. When the water comes to a boil, ad
