Kachoris are typical snacks from the west of India. As one travels from region to region, the kachori changes in size and stuffing. When cooking kachoris, have patience and be sure to control the temperature of the oil: If it is too hot, they will brown too fast and the flaky pastry will remain chewy and uncooked; if it is not hot enough, they will harden and absorb too much oil.
