Navratan Korma

Navratan means “nine jewels.” In this korma there are a few vegetables, a few mushrooms, paneer, and the rarely used makhana (puffed lotus seeds), nine ingredients in all. Artists in the royal courts of the Mughal emperors were called navratan and the emperors’ gorgeous jewelry was made of nine different gleaming gems.
