This is the bread I mentioned in the introduction to this chapter - it takes me back to my childhood, with its blistered crust, soft perfumed crumb and sourdough-like texture.

My friend Damian Allsop spent a lot of time developing this recipe with me, and seven years on we still make the same bread at the restaurant...I absolutely love it! It’s no easy ride and requires quite a few stages, but the end results are well worth the trouble.
