If there was a king of bread, brioche would be it. Sweet and light with a dark, rich crust, it is best served warm and makes a great accompaniment to pâtés, terrines and meat dishes.

Ingredients

  • butter and flour, for the moulds and dusting

Preparation

Brush seven 15cm moulds with butter and dust with flour, then place in the fridge to set.

  1. Put the yeast, milk and sugar for stage one into a small bowl and mix together with a wooden spoon until the yeast has dissolved. Sift in the flour, and mix until combined. Cover the bowl with clingfilm and l
