In my first restaurant we didn’t have the facilities for baking bread and didn’t want to buy it in, so we made these breadsticks instead. They’re a great way to start a meal, simple to make, and the yield is really good for the work involved. And who doesn’t love a breadstick? My daughter would eat them until she turned into one, if she was allowed! They’re great dipped into the hummus.
