If ever there was a soup that epitomized English summer cooking for me, it would have to be pea soup. I’m a big fan of serving it chilled, and I mean super-chilled: over ice, with pea shoots as a garnish. However, I do find that chilled soup can be a no-go area for kids, so it’s just as well that it also tastes delicious when warm!
