This is a cracking autumnal soup. It’s made with Jerusalem artichokes, which in spite of their name are not related to the globe artichoke. They’re available mainly from markets and greengrocers and are rarely seen in the supermarkets, but they’re one of the best root vegetables of the season and worth looking out for.
