This is my version of Italian minestrone, hearty and full of flavour, with a great combination of soft beans, crunchy vegetables and a lovely smokiness from the bacon.
You need good-quality ingredients and plenty of fresh herbs, and with the addition of a good loaf of crusty bread this recipe will deliver a hearty feast. You have to think about this dish in advance and start the process the day before, as the ham needs time to cook slowly and the beans need soaking.
